Pulled Pork Sandwiches
2.5 boneless pork loin
2 tsp red wine vinegar
2 tsp liquid smoke
1 tsp garlic powder
1 tsp salt
1 cup barbeque sauce of choice
whole wheat hamburger buns
mayonnaise
dill pickles
white onion
Marinate your pork overnight in the the first four ingredients. Plop everything in the slow cooker the next morning before you go to work with a tiny bit of water or stock. Turn in on low and go about your day. I made the mistake of making these on a day when I was home. The house starts to smell amazing, and you can't eat it for hours!!!
When the meat is cooked (about 8 hours), pull it out of the crock pot and drain out all but 1/2 cup of the liquid. Use two forks to 'pull' the pork (this means shred), then add it back to the crock pot with the cup of barbeque sauce and the 1/2 cup of cooking liquid. Turn the crock pot back on high for another hour. This helps infuse the meat with the flavors of the sauce, so don't skip this step.
When you're ready to eat, add the fixings you want to your sandwich. We put a small layer of mayonnaise on one side, and add some sliced dill pickles and white onion on top of the meat. We served this next to baked corn on the cob and it was dee-lish!!!
We had a bunch left over, which we decided to freeze, and we already have plans for the leftovers. PULLED PORK PIZZA! We will use a pre-made pizza dough, use barbeque sauce as the sauce for the pizza, add the pulled pork, chopped white onion, chopped dill pickle, and mozzarella cheese. We'll bake it as normal, and enjoy. There you go. A Foodie Friday two-for-one :)
