Foodie Friday: Rosemary-Anchovy Pork Chops

This past week we rescued our 'bachelor' friend and his son from a frozen pizza night.  His wife was out of town, so we had the two boys over for dinner and a romp in the kiddie-pool.


Corgan even got to have her own dinner with a friend, when she and Jack shared meatloaf and mac-and-cheese with peas at her kiddie-table.  They were soooo cute!  She didn't eat too much, but Jack kept asking for more mac-and-cheese. He was very well behaved and kept saying please.  I can't wait to hear Corgan use such good manners.

We then enjoyed the Rosemary-Anchovy Pork Chops, that I had in Monday's meal plan. The marinade effectively brined the pork chops, and they were soooo moist!  The broccoli and mashed potatoes were wonderful, too.  It's been years since I made homemade mashed potatoes, but doing them on Friday, when no one was home, made it easy to get them done.


Rosemary-Anchovy Pork Chops

½ cup rosemary
6 cloves garlic
14-16 anchovy fillets
½ cup extra-virgin olive oil
¼ cup red-wine vinegar
course salt and ground pepper
4 bone-in pork chops

In a large bowl (I used a Magic Bullet!) combine the first 6 ingredients.  Make sure they are all finely chopped. If you use the Bullet, then there is no need to finely chop. Coat pork and marinade for at least 15 minutes.  I marinated them overnight.  Heat the broiler, then put the pork on a baking sheet and cook in the middle of the oven for 10-12 minutes, flipping once.
